The nutmeg is wrapped in a shell, a natural preservative. Fascinatingly, the nutmeg tree delivers two spices - nutmeg and mace.
The fruit of this tree is not a fruit in the traditional sense of the term, but a bulb containing the nutmeg seeds. On its exterior is a thick protective shell that opens when the nuts are ripe. It is a fascinating sight when the shell breaks open to reveal the red flower and dark nut inside.
Nutmeg is a popular spice used in stews and sauces, perhaps best known for its use in bechamel sauce for lasagna. Nutmeg flower is, however, less commonly used - whole in stews, marinades, stocks and powdered in Quatre-epices, croquettes and sausages. The taste is slightly less strong than nutmeg and has a slightly sweet undertone, making it an ideal spice for cakes and other desserts.
