Sourced from underground salt springs in Villena, Spain, the hand-harvested salt flakes are dried by the Alicante wind in the Mediterranean sun. The salt flakes are then placed in a closed room and smoked for several weeks with burning oak wood. Smoked salt is extremely popular in Nordic cooking and can be used with all kinds of ingredients.
