Chipotle is made from Jalapeno chili peppers that score between 2500 -10,000 on the Scoville scale.
These peppers are bush-roasted until dark brown and wrinkled. The chili is then dried for several days in burning kilns.
The resulting flavor is a combination of strong pepper fruit and smoke that is commonly used in sauces, salsas and marinades.
