Origins and profile

We selected these origins for their consistency in the 2025 cupping , not for exoticism. Brazil brings the underlying sweetness and texture, Colombia offers clarity and balanced acidity, and Ethiopia elevates everything with subtle floral notes, integrating complexity in the finish.

Sensory profile (cupping notes):

• Top notes: gingerbread, baked apple
• Spice: nutmeg, cinnamon, vanilla, cardamom
• Aftertaste: milk chocolate, roasted almond
• Taste: velvety, medium to full-bodied
• Acidity: malic, well balanced
• Clarity: high, clean structure in extraction

Unique process: maceration with natural spices
This coffee is not infused and contains no added flavors. The beans are slowly macerated, post-roasting, with a select blend of food spices, which subtly integrate into the aromatic structure. The process is in-house, developed by the Cafeteca team, and kept unchanged in each annual edition.

Preparation recommendations
It is extracted correctly on:

• Espresso (18g in, 36g out, 27–30 sec.) – for body and sweetness
• XBloom / Pour Over – for clarity and individual perception of spices
• Kettle – for depth and persistent aftertaste

We recommend brewing at 93–94°C, degassing time 7 days after roasting.
